A: The middle setting should be fine with the coconut oil, keep in mind that most skillets on a stove top get up to 750 degrees F, so the middle setting should be under 400 degrees. Gluten is a protein found in all grains except for rice, millet, buckwheat and quinoa. Thanks for your feedback on the book. All the best!
